The story of coffee began with the discovery of a bush blessed with a delicate berry. Legend holds that in the 8th century a young shepherd by the name of Kiadi, discovered the berries of the coffee tree on the tablelands of Yemen. In the 15th century coffee was well known throughout the Near East and by the 16th and 17th century, it had arrived to warm the appetites of Europe.

Today,the Arabica and Robusta coffee trees produce the most popular coffee in the world. Arabica, from Ethiopia is low in caffeine, very aromatic and smooth, while Robusta, from Zaire, has a strong, bitter flavor and high caffeine content.

The roasting process allows each coffee bean to reach its optimum flavor and color. Roasting the beans slowly and without sudden changes in temperature are key steps towards a delicious cup of coffee.

A conical shaped china cup made of thick pottery warmed to 40 degrees celsius will preserve the consistency of espresso cream.

the water
Water should be low in lime and not too hard. For the best flavor, fill the tank with pure mineral water.

Coffee must be fresh and in perfect condition to achieve the perfect cup.

grinding
When using your innova minimill, the exact grind (coarse or fine), will depend on the quality of your coffee blend. From the start of coffee extraction until the 30 ml cup is full should only take 25 to 30 seconds.

Place some ground coffee in your palm, rub it and spread it with your finger, then blow on it. If your palm is almost clean, the grind is too coarse. If the coffee is stuck to your palm, the grind is too fine. However, if your palm is slightly stained by the coffee grind and the rest has disappeared, your coffee grind is close to perfect.

Cream is thin, and the color is light?

The ground measure is less than 7g.

Cream is very dark
with a light spot in the middle?

The ground is too fine and the measure is over 7g.

No body?
The ground is too coarse.

Aroma unpronounced? Extraction too fast?
Water temperature is below 88 degrees celsius. Pump pressure is lower than 9 atmospheres.

May have dregs. Extraction time is over 35 seconds (the liquid struggles out of the machine).

Poor cream thickness? Water temperature is over 92 degrees celsius.
